Hummus and chorizo salad
An excellent meal to make if you want to practise your knife skills, the most complicated part of this is chopping everything small enough; even the dressing is just hummus.

- Chopping board
- Large mixing bowl
Ingredients
- 1 chorizo
- 400g hummus
- 2x 250g pre-cooked grains (I like Merchant Gourmet Persian style grains for this recipe)
- 3 medium tomatoes
- half a cucumber
- 3 spring onions
- 30g fresh flat leaf parsley (coriander works as well)
- freshly ground black pepper
- salt to season
Method

1. Chop
Chop the chorizo, tomatoes, cucumber into half centimeter cubes, slices the spring onions and parsley, place in a large mixing bowl.

2. Reheat grains
Reheat the grains in a microwave according to packet instructions.

3. Combine and season
Put the grains in the mixing bowl, top with the hummus and mix, grind in fresh black pepper, season and serve.
